I consider this week, a win. I cooked all 5 nights. I get to be the super mom!
I was told that I need to include recipes – I will, when I can! That’s the only promise I can give! 😉
Sunday – Taco Pizza (7 points)
This was, one of my finer creations. Pizza Crust (pre-made – shoot me. I CAN make it…but for time reasons, I’m choosing NOT to!), 1 envelope taco seasoning, 1 can of refried beans, 1/2# ground turkey, 1 can green chilies (start the ground turkey and green chilies – cook together and then add the refried beans and packet of taco seasoning) Spray a 9X13 glass pan. Place pizza dough, in it. Top with the meat/bean mixture. Grab a bottle of smooth taco sauce and use it like pizza sauce. 1 bag of 2% shredded cheddar cheese. Bake @ 375 for 20 minutes. When it gets out of the oven, top with – shredded lettuce, diced tomatoes, black olives, diced red onions. Can top with light sour cream!
Sorry that was wordy – I just throw stuff together and hope for the best. THAT was an awesome creation! By far, my favorite “pizza”.
Monday – Tuna Cakes, Broccoli and Baked Potato (13 points)
Okay, THAT was the husband’s portion. ONE tuna cake is 3 points.
I’m not in love with the sauce – WAY too much chili powder. I’m not a fan of chili powder, except in chili so, I cut way back. If I would have put the amount specified, in, we would have been choking on it.
I say WE but…I was at Book Club. I did steal a small bite of the tuna cake. It was all right. Would have been better with crab (which, I will do next time!)
Tuesday – Pizza Casserole (6 points)
I changed it up a bit – I was getting sick of all that meat! (no jokes) Used turkey pepperoni, bacon, spinach, mushrooms, red onions and LF mozz. VERY good. I liked it a ton better than the normal pizza casserole.
Wednesday – Coney Bowl (8 points)
Yep, just like Skyline does it (but with ground turkey!) Cincinnati style chili, LF hot dogs (I have 2 chopped up, in there), a swirl of mustard, diced onions and sprinkling of LF cheese!
Thursday – Salmon with Red Coconut Curry (11 points)
As amazing as this LOOKS, it tasted 100X better – I guarantee it. So frickin’ good! The rice – perfect. The sauce – perfect. The salmon – perfect. I got the recipe (well, for the red Thai coconut curry) from a work Iron Chef contest. So, you can’t get it because I’m too lazy to copy it. 😉 Whatever curry recipe you look up, make sure that you substitute LITE coconut milk for the coconut milk! Your ass will thank you.
I had a fabulous cooking and weight watcher week – we’ll see what the scale brings, tomorrow. I haven’t started working out. Yeah, I know. Sue me. I know what I gotta do! (It’s just a matter of doing it)
I’ll only be cooking dinner 2X, next week. Well, I’ll be making things for Sunday and Monday parties so…forever cooking! (One of those items will be FRIED OREOS – jealous?)
